Viticulture

+ Planted in well structured clay-loam soil, rich of minerals and with abundant stones of alabaster at about 340m above sea level

+ Mediterranean sea breeze adds to freshness and complexity

+ Sustainable, biological viticulture, natural treatments to maintain the balance of the ecosystem

+ Hand picked early to mid September

 

Vinification

+ Fermented for about 15 days in french barrique

+ Frequent batonnages for about 6 months in french barrique
