Viticulture

+ Planted in a mineral-rich, well structured clay-loam soil at about 380m above sea level

+ Sustainable, biological viticulture, natural treatments to maitain the balance of the ecosystem

+ Hand picked early to mid September

Vinification

+ Fermented for about 15 days in stainless steel

+ Ageing for about 3-4 months in stainless steel vats
